Duck, Boursin, and arugula sandwiches

This delicious meal builds on the recipe for simple shredded duck, which appeared in the Dec. 16 issue of What’s Up Yukon.

Ingredients
  

  • 4 slices bread toasted
  • 1/2 wheel Boursin cheese any flavor you fancy
  • 1 cup shredded duck
  • 1/2 cup baby arugula

Instructions
 

  • Place shredded duck in a frying pan over medium heat and gently cook until the edges of the meat begin to darken and brown.
  • Place bread on cutting board. Spread each slice with Boursin cheese, then top with the warmed duck, followed by arugula. Serve immediately.
