1. Place 1 tortilla on a work surface, top with 1/2 a Kraft single, 1/4 cup grated cheddar, 1/4 cup kimchi, then top the kimchi with the remaining half single and cheese, and top with another tortilla.
2. Heat a skillet or flat top to medium-high heat, then toast the quesadilla on each side until the tortilla is crisp and the cheese is melted. Repeat with remaining ingredients and serve with more kimchi on the side.
