Tofu - Ginger Soup

Ingredients
  

  • 4 cups chicken or vegetable broth
  • 3 celery stalks finely sliced
  • 1/3 cup peeled ginger root cut into 2" matchsticks
  • 2 cloves garlic minced
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 cake firm tofu cut into cubes
  • 1 cup cooked rice
  • 4-5 green onions thinly sliced (both white and green parts)

Instructions
 

  • Heat the broth in a large pot and add the celery, ginger, garlic,
  • and soy sauce. Simmer for 10 minutes.
  • Add the tofu and rice and simmer for another five to 10 minutes.
  • Stir in the sesame oil and green onions, and serve.

Notes

(You may want to add a few dots of a hot sauce like Sirachi if you like your soup a little spicy.)
