Tofu - Ginger Soup

Ingredients
4
cups
chicken or vegetable broth
3
celery stalks
finely sliced
1/3
cup
peeled ginger root
cut into 2" matchsticks
2
cloves
garlic
minced
3
tbsp
soy sauce
1
tsp
sesame oil
1
cake firm tofu
cut into cubes
1
cup
cooked rice
4-5
green onions
thinly sliced (both white and green parts)
Instructions
Heat the broth in a large pot and add the celery, ginger, garlic,
and soy sauce. Simmer for 10 minutes.
Add the tofu and rice and simmer for another five to 10 minutes.
Stir in the sesame oil and green onions, and serve.
Notes
(You may want to add a few dots of a hot sauce like Sirachi if you like your soup a little spicy.)
