“I saw your page showcasing local food and I don’t know where to start ( so much local food available) so I thought I’d take a photo of what I used today – Little Red Hen eggs.  I love that I can go to my nearby grocery store (Bigway) and buy locally produced eggs.

Helga’s Bran Muffins

Here’s the bran muffin recipe that I have adapted and been using for eons:"

Ingredients
  

  • ¼ cup oil
  • ½ cup demerara sugar
  • ¼ cup molasses
  • 2 eggs unbeaten
  • 1 cup milk
  • 1 ½ cups bran
  • 1 cup all purpose flour whole wheat
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup raisins
  • Optional:
  • Cut up sugared orange peel or any bits of fruit such as cranberries
  • ¼ cup sunflower seeds or pumpkin seeds
  • Almonds – one per muffin

Instructions
 

  • Cream oil and sugar together,
  • Add molasses and eggs. Beat well.
  • Add milk and then bran.
  • Sift flour, baking soda, baking powder and salt together.
  • Add raisin and other optional fruit and seeds.
  • Place in muffin tin and bake for 15 minutes at 400 degrees Fahrenheit.
