Rosemary grilled herring

Grilled whole fish are easy and delicious and a great break from the classic hotdogs and burgers. Herring are an inexpensive fish, making them a great place to start if you’ve never grilled fish before. They’re also small and easy to maneuver around a grill. Some people find these fish a bit fatty, but coating them with lemon and rosemary cuts through those flavors.

Ingredients
  

  • 8 whole herring gutted
  • 2 tbsp olive oil
  • 1/2 tsp dried rosemary
  • Pinch red pepper flakes
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions
 

  • Toss herring with olive oil, dried rosemary, red pepper flakes, lemon juice and salt and pepper. Cover and refrigerate for 20 minutes while you heat the grill.
  • Heat grill to high heat. Place the herring on the grill and cook for 3 minutes. Flip, then cook for an additional 3 minutes. Remove fromt he grill and serve drizzled with lemon juice and olive oil.
