Banana Cake

A classic, as tasty as easy

Ingredients
  

  • 2 eggs
  • 1-1/2 cup flour
  • 1 cup mashed potatoes
  • 1 tsp soda
  • 1 tsp. vanilla
  • 1/8 tsp salt
  • ½ cup buttermilk
  • ½ cup shortening
  • ½ cup chopped walnuts
  • 1-1/2 cup sugar

Instructions
 

  • Cream shortening and sugar, add eggs and beat.
  • Mix in bananas and vanilla.
  • Add dry ingredients alternately with milk. Fold in nuts.
  • Bake in square or layer pans at 350 degrees.

Raisin Pecan Cake

Ingredients
  

  • 2 eggs
  • 1 tsp. Cinnamon
  • 1 cup seedless raisins
  • 1/2 cup butter
  • 1 -2/3 cup flour all purpose
  • 1 cup brown sugar
  • 2-1/2 tsp. baking powder
  • 1 tsp vanilla
  • ¼ tsp. soda salt and all spice.
  • 2-1/2 cup chopped pecans
  • 2 cups boiling water

Instructions
 

  • Simmer, covered, raisins in water for 15 minutes. Drain and save ½ cup of the liquid. Cool.
  • Cream butter, blend in sugar, add eggs and vanilla, Add liquid and dry ingredients. Fold in raisins and nuts.
  • Bake in 8 inch pan for 45 minutes at 350
  • BUTTER CINNAMON ICING
  • Sift together 2 cups icing sugar, ½ tsp. cinnamon, and a few grains of salt.
  • Blend in ¼ cup butter and 2 tbls. hot cream.
  • Add ½ tsp. vanilla.

Tasty Chocolate Snowballs

Servings 25 balls

Ingredients
  

  • 1 egg
  • 14 Graham wafers
  • 1/4 tsp. flavouring
  • 2 tsp. soft butter
  • 2 tbls. fruit juice
  • 1 cup icing sugar
  • ½ can cocoanut
  • ¼ tsp salt
  • 2 sq. unsweetened chocolate or 5 level tsp. cocoa.

Instructions
 

  • Cream butter and sugar, add salt, chocolate (melted) and egg.
  • Stir in flavouring and crumbs. Shape into 1 inch balls. Dip in fruit juice. Roll in coconut.
  • Place on tray. Keep refrigerated. Makes 25 balls.

Angel Cake

It's not called Angel Food for no good reason

Ingredients
  

  • 6 eggs separated
  • 1-1/2 cups. sugar½ cup water
  • 1 cup flour
  • 1 tsp. cream of tartar
  • ½ tsp. salt
  • 1 tsp. vanilla

Instructions
 

  • Cook sugar and water to soft ball stage. Pour slowly into well beaten egg whites. Continue beating until mixture stands in peaks.
  • Beat egg yolks until thick and lemon colour. Add white mixtures.
  • Sift flour salt cream of tartar and fold into egg mixture. Add vanilla.
  • Bake in ungreased tube pan for 1 to 1 and a quarter hours at 250 degrees.
