Eggplant is controversial, but even the most skeptical can appreciate these juicy little bits. Especially when dipped in comeback sauce, which is a staple at fast-food restaurants such as Sonic, throughout the south of the U.S.

Eggplant Bits With Comeback Sauce

Ingredients

  • 1 eggplant, cubed
  • 1 Tbsp salt
  • 3 Tbsp olive oil
  • 2 tsp garlic powder
  • 1/2 cup mayonnaise
  • 1/4 cup chili sauce (Heinz-style sauce)
  • 2 Tbsp yellow mustard
  • 1 tsp sugar
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Toss cubed eggplant with salt and let sit for 15 minutes. Press with a paper towel, to get rid of excess liquid, then toss eggplant with olive oil and garlic powder and place on a sheet tray or into the basket of an air fryer. Cook for 20 minutes at 400℉ or until the eggplant is golden brown.
  2. Mix together mayonnaise, chili sauce, mustard, sugar and Worcestershire. Season, to taste, with salt and pepper and serve with eggplant bits.
