Olive Oil Poached Garlic Pasta

Ingredients

  • 3 to 4 heads of garlic, peeled
  • 1 cup olive oil
  • Bay leaves (optional)
  • Peppercorns (optional)
  • Dried chillies (optional)
  • Lemon rind (optional)
  • Short tubular pasta, cooked according to package directions (reserve 1/2 cup cooking water)
  • Salt and pepper, to taste

Instructions

    1. Combine garlic, olive oil and any optional ingredients in a small saucepan over low heat. Gently heat until the garlic is soft and brown, about 15 minutes.

    2. In a saucepan, combine a large scoop of garlic cloves and oil with the water left after cooking pasta. Using a spatula, mash the garlic into a paste and then simmer with pasta water until it emulsifies into a sauce. Add pasta and continue to cook and reduce. Season, to taste, with salt and pepper.

Makes 1 large jar of Olive Oil Poached Garlic (enough for a large meal).
