Garlic-Roasted Cauliflower

Ingredients
  

  • 1 small head of cauliflower cut into small chunks
  • 1 head of garlic cleaned and cut into individual cloves
  • 3 Tbsp olive oil
  • Salt and pepper to taste
  • 1/8 tsp dried thyme

Instructions
 

  • 1. Toss cauliflower and garlic together, then drizzle with olive oil and season, to taste, with salt and pepper.
  • 2. Place on a sheet pan and roast at 400 F until cauliflower is brown and garlic is soft, about 15 minutes.
  • 3. When cauliflower is done, serve as is for a simple vegetable side, or toss with pasta and heavy cream and cheese for an easy dinner, or stuff into a sandwich with some pesto for an easy lunch.
