Add this cauliflower to a hearty salad, mix with pasta or use it as an addition to a kinda-healthy grilled-cheese sandwich.
Garlic-Roasted Cauliflower
Ingredients
- 1 small head of cauliflower, cut into small chunks
- 1 head of garlic, cleaned and cut into individual cloves
- 3 Tbsp olive oil
- Salt and pepper, to taste
- 1/8 tsp dried thyme
Instructions
1. Toss cauliflower and garlic together, then drizzle with olive oil and season, to taste, with salt and pepper.
2. Place on a sheet pan and roast at 400 F until cauliflower is brown and garlic is soft, about 15 minutes.
3. When cauliflower is done, serve as is for a simple vegetable side, or toss with pasta and heavy cream and cheese for an easy dinner, or stuff into a sandwich with some pesto for an easy lunch.
