Recipe: Santa’s Whiskers

Thank you to Mayo resident Cheryl Klippert for this recipe. She says she makes these cookies every year, “My children liked them and I am sure my grandchild will enjoy them as well when he gets a little older!”

Santa’s Whiskers

This cookie is a slight variation from the traditional shortbread.

1 cup butter

1 cup white sugar

1 tsp. vanilla

2 1/2 cups white flour

3/4 cup finely chopped red/green candied cherries

1/2 cup chopped pecans

1 cup flaked coconut

Mix first 6 ingredients together well. Shape into 2 rolls 2″ in diameter.

Roll in coconut. Cover and chill a few hours. Slice 1/2 ” thick, bake on greased sheet in 375 degree oven for 10-12 minutes.
