Old-Fashioned Clementine Marmalade

Clementines always come in bundles, and while I always want to eat the whole thing, there are inevitably some that end up sitting on the counter getting hard. Marmalade is a great way to use up that fruit, and adding some of the flavours of the classic cocktail—the Old Fashioned—is a fun play on a classic preserve.

Old-Fashioned Clementine Marmalade

Ingredients

  • 10 clementines
  • 2 cups white sugar
  • 1 cup brown sugar
  • 1 shot bourbon
  • A few drops of bitters, optional

Instructions

  1. Halve and squeeze juice of all the clementines into a 2-cup measure, remove all seeds and discard. Thinly slice all the rinds in a pot. Fill the 2-cup measure with juice and water to the 2-cup line. Pour the water and juice over the rinds and add white sugar. Bring to a simmer and cook until the rinds are soft, about 30 minutes. Add the brown sugar and continue to cook until marmalade is thick.
  2. Let cool completely then add the shot of bourbon and mix well. Add bitters, if using. Keep in a sealed container in the fridge for up to a month.
