Clementines always come in bundles, and while I always want to eat the whole thing, there are inevitably some that end up sitting on the counter getting hard. Marmalade is a great way to use up that fruit, and adding some of the flavours of the classic cocktail—the Old Fashioned—is a fun play on a classic preserve.
Old-Fashioned Clementine Marmalade
Ingredients
- 10 clementines
- 2 cups white sugar
- 1 cup brown sugar
- 1 shot bourbon
- A few drops of bitters, optional
Instructions
- Halve and squeeze juice of all the clementines into a 2-cup measure, remove all seeds and discard. Thinly slice all the rinds in a pot. Fill the 2-cup measure with juice and water to the 2-cup line. Pour the water and juice over the rinds and add white sugar. Bring to a simmer and cook until the rinds are soft, about 30 minutes. Add the brown sugar and continue to cook until marmalade is thick.
- Let cool completely then add the shot of bourbon and mix well. Add bitters, if using. Keep in a sealed container in the fridge for up to a month.
