Blackened sweet pepper with chilis and eggs

Cooking red bell peppers and onions until they’re soft and just beginning to blacken makes them sweet with a bit of char flavor. Tuck them into soft rolls with eggs for brunch, or a light supper.

Blackened sweet pepper with chilis and eggs

Ingredients

  • 2 tbsp butter
  • 1 onion, finely chopped
  • 2 red peppers, finely chopped
  • 1 tsp red chili flakes
  • 4 tbsp water
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a cast iron skillet over medium-high heat. When melted, add the onions and cook until beginning to soften. Add peppers, chili flakes, and water. 
  2. Turn the heat to low. Continue to cook until water is evaporated and peppers are soft and beginning to blacken. Season to taste with salt and pepper. Remove the peppers and onions from the pan.
  3. Return pan to medium-high heat and cook two eggs until whites are set and yolks are runny. Serve with soft rolls.
